Our top-grade saffron possesses a deep red color. It is dry to the touch and the stigmas will be 3/8” to 3/4” in length.
 
It takes 75,000 blossoms or 225,000 hand-picked stigmas to make just one pound of saffron, which is why it is the most expensive spice in the world. You can find its delicate flavor in  rice, puddings, festive breads, cookies, paellas,  ice cream, and risottos. A couple strands are a delight in green tea or hot milk.
 
How much saffron should you use?
Most chefs believe saffron is more about the aroma than the taste and if you can taste the saffron in a dish, too much has been added. A good rule of thumb is to use about three strands per person. There are approximately 450 threads per gram of saffron, so 3 gram would yield approximately 450 servings.
